PUMPKIN MADELINES

We used to make these daily to go into the bread baskets. These are so good we had to limit how many we put in the baskets cuz people wanted just this. Even had to hide them from the staff cuz we would eat them like candy all day!

PUMPKIN MADELINES

1/4 lb. butter

1c. flour

1 tsp. baking powder

2/3c sugar

4 eggs

1/4 tsp. grated orange or lemon peel

1 tsp. cinnamon

1 tsp. nutmeg

1/2 tsp. pumpkin pie spice

1c. pureed pumpkin

Poppy seeds

You will need special madeline pans for these. For those daring enough tho you might want to put some on cookie sheets to make soft cookies or even sm. muffin pans.

Melt butter and cool. (It gets added last and must be cool). Put eggs and sugar in food processor and blends till it makes ribbons, sugar will dissolve. Add pumpkin and rinds. Blend. Next sift together dry ingredients and spices. Add butter and refrigerate for 20min. Put in greased madeline pans sprinkled with poppy seeds. and bake at 400 degrees for 15-20min.
