Gooseberry Ginger Freezer Jam



 I turned these.......a bag of gooseberries I got at the farmers market Sunday.....
Into this........several freeze containers of delicious Gooseberry Ginger Jam. The berries I got are not the usual green gooseberries, these were red. This jam was an experiment that's why I made it as a freezer jam first. Its delicious tho, tangy, and sweet, thickens quickly when cooling.  


Gooseberry Ginger Freezer Jam

4 1/2c. gooseberries, stems and blossom ends removed
1c. honey
1 1/2c. organic sugar
1 chunk peeled fresh ginger, about 1-2 in. long
2tb. lemon juice
1c. organic unfiltered apple juice
1tsp. butter
1 pkg. Ball no sugar needed fruit pectin

Put gooseberries, ginger, honey, 1c. of the sugar, lemon juice and apple juice in lg. pan. Bring to a boil, then simmer till berries are soft, add butter if starting to foam.

Mix remaining 1/2c. sugar with the pkg. of pectin. Stir well.  When fruit is at the texture and taste that you want, whisk in sugar/pectin mixture. Cook 3min. more. Jam will thicken a bit and get clearer.  Remove ginger chunk before putting in containers.

Pour into freezer jam plastic containers and seal. Let cool, label then put in freezer. This made 5 (80z.) freezer containers full plus  tiny bit which I promptly ate!
